This makes a very simple, basic, (yet delicious!) non-fussy lunch or dinner. It doesn't really matter what sort of cheese, bread, or vegetable you use; I just used what I had on hand.

Recipe Ingredients for Cucumber Panini/ Grilled cheese

2 slices wheat bread
2 tbsp smart balance buttery spread
1 tomato, sliced
1/4 cucumber, sliced
1/4 cup sharp cheddar cheese, sliced
1 sprig of parsley (optional)

Recipe Directions for Cucumber Panini/ Grilled cheese

  1. Heat butter in a frying pan over medium heat.

  2. Put in the slices of bread, pressing down occasionally with a spatula until browned on one side.

  3. Flip the slices of bread over, and arrange the slices of cheese on one of them. Allow to cook until the bread is browned, and the cheese is melted.

  4. Transfer bread slices to a plate, then arrange cucumber and tomato slices over the cheese. Place the other slice of bread on top.

  5. If you like, cut the sandwich in half diagonally, then serve on a plate garnished with a sprig of parsley and a couple slices of cucumber. Enjoy!
