Marinated cucumber cups filled with crabmeat that has been tossed in a tarragon cream sauce.

Recipe Ingredients for Cucumber Crab Cups

1 english cucumber, peeled
2 cup water
1/2 cup mirin
1/2 cup rice vinegar
1/2 cup heavy cream
1/2 cup milk
1 tablespoon shallots, chopped
1 tablespoon white wine
1 teaspoon sea salt
1/2 teaspoon white pepper
2 teaspoon dijon mustard
1 teaspoon chopped tarragon
9 ounces crabmeat
1/2 red bell pepper
1 teaspoon smoked paprika

Recipe Directions for Cucumber Crab Cups

  1. Add water, mirin, vinegar in a container.

  2. Cut cucumber into 9 sections and scoop out half the center leaving a nice cup shape.

  3. Add to marinade for 20 minutes.

  4. In a small pot, sweat shallots and deglaze with wine.

  5. Add cream and milk, simmer and reduce down to just below half.

  6. Add salt, dijon mustard and tarragon during last part of reduction. Simmer on low until flavors blend.

  7. Roast crab meat until hot, add to cream sauce and mix well.

  8. Fill cucumbers with crab filling.

  9. Small dice bell pepper and sprinkle over the top along with paprika.
