This is a refreshing vegetarian appetizer for the warm summer months. Recipe came from First Magazine and was part of their healthy avocado article. I found it at www.recipezaar.com under the raw food recipes.

Recipe Ingredients for Cucumber Bruschetta (No Bread)

1/4 ripe avocado
3/4 teaspoon fresh lime juice
3/4 teaspoon chopped fresh cilantro
3/4 teaspoon diced red onion
1 salt
1 pepper
1/4 English cucumber, sliced digonally

Recipe Directions for Cucumber Bruschetta (No Bread)

  1. Prepare your avocado by cutting in half, removing the pit, peeling and cubing it.

  2. Mix together the avocado, lime juice, cilantro, and onion. Salt and pepper to taste.

  3. Spoon small avocado mix (you don't want it to fall off and become messy) onto cucumber slices and serve.
