A cold soup for summer days when your garden overflows with cucumbers.

Recipe Ingredients for Cucumber-Avocado soup

12 oz cucumber, peeled, deseeded
5 oz avocado
2 scallions, chopped,
7 1/5 oz chicken broth
6 oz yogurt
1 oz lemon juice
1/2 t black pepper

Recipe Directions for Cucumber-Avocado soup

  1. peel one large (or two medium) cucumbers, deseed and cut into one-inch chunks

  2. peel and remove pit from a ripe haas avocado

  3. chop two scallions (including green and white parts)

  4. Blend (pulse) the above ingredients in a food processor until thoroughly chopped.

  5. add chicken broth, yogurt, lemon juice and black pepper and blend until smooth.

  6. add salt & pepper to taste

  7. chill for 4 or more hours before serving.

  8. serve in chilled bowls with garnish of your choice (fresh mint leaves is classic)
