3 Tbls Olive Oil, extra virgin
1 raw Yellow Onion
1 Tbls fresh Garlic
1 Bell Pepper Red
1 Eggplant
2 Zucchini
2 cups Mushrooms, (86 g) Portabella (cup,+diced)
2 Tomato Roma
2 Tbls Balsamic vinegar
2 cups Spinach raw
2 cups Tomato Puree
2 tsp Salt
2 Tbls Basil leaves
2 Tbls italian parsley
1/2 tsp Oregano, dried
1/2 tsp Rosemary (1 g) leaves, dried (tsp)
1/4 tsp Crushed Red Pepper

Recipe Directions for Cubetti di Verdure Cotte (Italian Salsa)

  1. Place a large heavy-duty skillet on the stove over medium heat.

  2. Add olive oil, onions, red bell pepper, and garlic.

  3. Simmer until onions begin to turn translucent.

  4. Add eggplant, zucchini, mushrooms, and tomatoes.

  5. Simmer until the most of the juice from the tomatoes has evaporated

  6. Add balsamic vinegar and stir to coat vegetables

  7. Add remaining ingredients and stir to mix

  8. Simmer on low for 15-25 minutes, stirring occasionally - until vegetables are to your desired doneness
