Tomato based saut?ed onions, garlic olives for any firm white fish. Sea Bass, Snapper, Ono, Roughy etc.

Recipe Ingredients for Cuban Style Fish Topping

1 tbs extra virgin olive oil
238 g Yellow onion
121 g red bell pepper
19 g garlic
135 g Roma tomatoes
1 g Mushrooms
8 oz dry red wine
39 g Olives
31 g capers
20 g Cilantro
12 oz Kroger Tomatoes
1/8 teaspoon red pepper flakes

Recipe Directions for Cuban Style Fish Topping

  1. Saute onions and shallots in a large skillet in oil till limp.

  2. Add minced garlic for about a minute.

  3. Add chopped tomatoes, wine (white makes a lighter sauce), olives, capers and red pepper flakes. Reduce to a simmer.

  4. Add fish, spoon sauce over, cover and cook for 10-12 minutes or until fish flakes.

  5. Remove fish and keep warm. Leave lid off and simmer sauce until desired thickness. Spoon over fish and serve.
