Cuban Style Bean Stew Recipe

I use homemade vegetable or chicken stock in place of the water. Makes lots. Eat now and freeze in small portions for later.

Recipe Ingredients for Cuban Style Bean Stew

1 cup black beans, dry
1 cup navy bean, dry
1 cups, small kidney beans, dry
1 cup barley
8 cups water
28 oz canned tomatoes, no salt
1 cup onion, chopped
1 cup celery, chopped
2 cans tomato paste, no salt
1 cup green pepper, chopped
5 cloves garlic, minced
2 tbls olive oil
2 tbls red wine vinegar
1/2 tsp cumin
1/2 tsp oregano
4 oz canned green chilis
1 tsp kosher salt

Recipe Directions for Cuban Style Bean Stew

  1. Soak beans overnight. Removed floating debris and parboil for an hour or until soft. Drain.

  2. Pour olive oil in pan and saute onion and green peppers until soft and onions are transparent. Add garlic and continue to saute for two more minutes.

  3. Add sauteed ingredient to a large stock pot. Add beans and remaining ingredients, except barley and water/broth.

  4. Add enough water/broth to cover all ingredients by an inch. Bring to a boil and then turn down to simmer. Simmer for two hours, adding water/broth as needed.

  5. Add barley and two cups of water/broth. Bring to a boil again and then simmer for another 20 minutes. Add more liquid to get desired consistency.

  6. Serve in a bowl or over rice.
