This one has a kick. It's not your same old, same old Chicken.

Recipe Ingredients for Cuban Chicken Skewers

1 Chicken breast, boneless
1 Sweet Pepper, Red
1 Onion, medium
1 Zucchini
1 Squash
3 cloves garlic
1 Jalapeno pepper
1 Mango
1/2 cup Orange juice
1/4 cup lemon juice
1/2 tsp Cumin
1/2 tsp Chili powder
1/2 tsp pepper, black
1/2 tsp Coriander seed
1/2 tsp Paprika
1 tbsp Olive oil

Recipe Directions for Cuban Chicken Skewers

  1. **Prepare the marinade first so as not to cross contaminate items**

  2. Place 1 tbsp of Oilve oil, 1/2 cup Orange juice, juice from 1 lemon, add chopped garlic and all spices to large bowl

  3. Take 1 breast, place it lengthwise on cutting board

  4. Slice in 3 long strips, then cube them(1/2 x 1 inch thick)

  5. Place chicken into marinade and store in refrigerator from 2 to 8 hrs

  6. When you are ready to eat. Slice vegies 1/2 inch thick Leave Jalapeno pepper whole & don't forget the mango

  7. Skewer the Chicken pieces and vegies separate for even cooking.

  8. Light the grill, heat high enough to sear items on grill

  9. Use 1/2 grill for Chicken & the other for vegies.

  10. Place mango and Jalapeno on the grill to use for dipping sauce

  11. Turn chicken after peices develop char marks, each side

  12. Cooking times: Approx 10 minutes for Chicken, approx 15 for vegies. If you are not sure take the thickest piece off and test for doneness

  13. Take mango and jalapeno off when there are char marks on them.

  14. Scoop out seed from both, then chop jalapeno and mash mango. Place a dollop on your plate and dip if you wish. It has quite a kick

  15. Divide serving size by number of people served. I portion by skewer to make it easy
