Recipe Ingredients for Cuban Black Beans

1 cup dried black beans
3 cups water
1 1/2 teaspoons minced jalapeno peppers
1 medium onion chopped
1 1/2 tablespoons minced garlic
1/2 cup green pepper
1 1/2 teaspoons pepper
1/4 teaspoon salt
2 tablespoons red wine vinegar
1/4 cup cooking sherry
6 tablespoons light sour cream

Recipe Directions for Cuban Black Beans

  1. Rinse and sort through beans. Cover with water at least 4 inches higher than beans and soak overnight.

  2. Too cook, drain the beans and combine with water (or vegetable stock), and jalapeno peppers in a large saucepan. Bring to a boil, reduce to a simmer and cook, covered for 1 1/2 hours. The beans should be tender, not mushy.

  3. cook the onion, garlic, and bell pepper in a a large sauce pan, covered, over low heat until onion is translucent, adding a little water if necessary to prevent scorching.

  4. When the beans are done, puree one quarter of them in a blender or food processor, then return the to the pot. Add the onion mixture and remaining ingredients and bring to a boil... Reduce the heat and simmer uncovered until slightly thickened. To serve, place 1/2 cup over brown or white rice. Top with 1 tablespoon sour cream and chopped scallions if desired.
