This recipe can be served over rice as an entree or, thinned with vegetable broth, it can double as black bean soup.

Recipe Ingredients for Cuban black beans

1/4 cup olive oil
1 onion
1 green bell pepper
2 stalks celery
4 garlic cloves
40 ounce black beans
2 tspn salt
1 tbsp bay leaf
2 tspn cumin
1/2 tspn oregano
2 tbsp lemon juice

Recipe Directions for Cuban black beans

  1. In a large skillet, heat the olive oil. Cook the onions, green bell peppers, celery, and garlic in the oil over medium heat until the onions are translucent (about 10 minutes).

  2. Add the beans, salt, bay leaf, cumin, oregano, and lemon juice and stir well.

  3. Cover and simmer for another 35 or 40 minutes, stirring occasionally to prevent sticking. Remove the bay leaf and serve over rice.
