Meat free beans to serve over brown rice

Recipe Ingredients for Cuban Black Beans

3 cups canned black beans
1 red bell pepper
1/2 cup red onion
1 tsp cumin
1 tsp oregano
2 tsp olive oil
1 tbsp red wine vinegar
2/3 cups cilantro, fresh
2 cloves garlic, minced
1 tsp salt

Recipe Directions for Cuban Black Beans

  1. In large skillet cook onion, pepper and garlic until soft. Add 2 cans of undrained beans, and cilantro

  2. Simmer for 15 minutes and add vinegar just before serving. Spoon beans over rice and add chopped raw red onion, fresh ciltantro. Squeeze lime juice over dish. Can be served with light sour cream and fresh avocado.
