  1. Cook 1 cup of quinoa in 2 cups of chicken broth. Heat to a boil and then reduce heat and simmer for 15-20 minutes (just until water is absorbed)

  2. Add onion, minced garlic and spices and cook for 5 minutes in a pot. Add beans and coat with mixture for 1 minute. Add 1 cup of chicken broth and simmer for 20 minutes.
