Recipe Ingredients for Cuban Black Beans with Brown Rice

29 oz Black Beans
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
1 medium raw Onion Yellow
1.5 cup Brown Rice
1 cup Vegetable Broth
1 serving Ground Cumin
2 tsp Chili Powder

Recipe Directions for Cuban Black Beans with Brown Rice

  1. Saute onions, peppers and minced garlic along with spices for about 5 minutes over medium high heat.

  2. add the beans, and coat with spice for about 1 minute

  3. Add the vegetable broth, cover and simmer for about 15 minutes.

  4. Serve over cooked brown rice (about a half a cup of rice with 3/4 cup of beans for one serving)
