Recipe Ingredients for Cuban Black Beans 1#

1 lb black beans
4 cups water
1 green pepper
2 tsp Salt
2 oz Extra Virgin Olive Oil
1 large Onions
6 clove Garlic
1/4 tsp Pepper, Black

Recipe Directions for Cuban Black Beans 1#

  1. soak beans in 4 cups water overnite with salt and half green pepper (whole to be removed later).

  2. Second day: In a separate frying pan, heat oil.

  3. Brown the onion and 1/2 fresh green pepper chopped. Once these are almost done, add the garlic, cumin, black pepper. Cover and simmer about 1/2 hour. Stir and Do not burn the garlic!

  4. Then add to the beans along with the vinegar. Cover and cook on low stirring can be all day to next day until the sauce thickens a bit.

  5. Serve over white rice or serve in a bowl with people adding a tablespoon of rice and fresh chopped onions as a soup.
