A delicious, hearty soup born from ingredients found in the cabinet.

Recipe Ingredients for Cuban Black Bean Soup

2 cups black beans
2 cups diced tomatoes
1/2 medium onion
40 oz chicken broth
10 oz chicken breast
3 cloves garlic
1 tbsp olive oil
1 tbsp salt
1 tsp black pepper
1/2 tsp cinnamon
1 tsp ground cumin
1/4 cup white vinegar
1 cup white rice

Recipe Directions for Cuban Black Bean Soup

  1. Sautee chopped chicken breast in pan with 1 tbsp olive oil, 2 cloves of garlic, and the 1/2 medium chopped onion.

  2. Shred chicken as well as you can, then combine chicken and other ingredients from sautee pan with chicken broth (you can use canned or bouillon cubes), can of black beans, can of diced tomatoes, 1 clove diced garlic, salt, pepper, cinnamon, cumin, and white vinegar. Bring to simmer and cook for 5-7 minutes.

  3. Add 1 cup white rice, and simmer for 15 more minutes.
