Recipe Ingredients for Cuban Black Bean Soup

2 cup dry Dried Black Beans
2 medium raw Bell Pepper Green
8 oz Cilantro
1 medium (2-1/2" dia) Onions
1 cup Olive Oil
2 cloves, raw Garlic
3 medium Russet Potato
2 large (7-1/4" to 8-1/2" long) Carrots
3 serving VIGO ADOBO WITHOUT PEPPER
3 serving Ground Cumin
2 tbsp Turmeric, Ground
2 tsp Spices Ground Coriander

Recipe Directions for Cuban Black Bean Soup

  1. soak 1lb black beans overnight, 4-6 cups of water

  2. drain and rinse beans (keep to side)

  3. puree cilandro in blender (can also add oil to this, garlic, onion and bell pepper)

  4. chop veggies

  5. sautee oil and spices

  6. add veggies

  7. add beans

  8. cover with water

  9. can use pressure cooker, slow cooker or regular large pot

  10. bring water to rolling boil (then add lid and reduce heat to medium for 30 min)

  11. pre-portion out into 2 cup (16 oz) containers

  12. allow to cool, then refrigerate or freeze
