As always, Karl may put some other yummy things in there of negligable nutritional value. Especially cumin, achiote, and mexican oregano.

Recipe Ingredients for Cuban Beans and Rice

1 tablespoon olive oil
1 cup chopped onion
1 green bell pepper, chopped
2 cloves garlic, minced
1 teaspoon salt
4 tablespoons tomato paste
1 cup black beans, dry.
1 cup uncooked white rice

Recipe Directions for Cuban Beans and Rice

  1. Soak and simmer black beans in water for 30 minutes to two hours. Until cooked. Throw in some garlic or mexican oregano while they are simmering. When starting to get tender, remove and drain, being sure to save some of the water.

  2. Sautee first five ingredients together.

  3. Add paste, beans, and rice.

  4. Then add 2.5 cups liquid, filling out the bean fluid with enough water to get that amount.

  5. Simmer superlow for up to 50 minutes, covered, until fluid is completely absorbed, and rice is cooked.
