Recipe Ingredients for Cuban Beans

2 tbsp olive oil
1/2 cups diced onion
1/2 cups diced carrot
1 yellow pepper, seeded and diced
1 tbsp chopped garlic
1 1/2 tsp chili powder
1/2 tsp cumin
14 1/2 oz can diced tomatoes
3 1/2 cups cooked black beans
1/4 cups chopped cilantro
1 salt and pepper to taste

Recipe Directions for Cuban Beans

  1. Heat the oil in a pot

  2. Add the onion, carrot, and pepper and cook for 10-12 minutes, or until softened

  3. Add the garlic and cook for 1 minute

  4. Add the dry spices and cook for another minute

  5. Add the tomatoes and simmer for 3 minutes

  6. Add the remaining ingredients and heat through
