Recipe Ingredients for Crusty pear tart

8 pear, medium (approx 2-1/2 per lb) Pears
1 fruit (2-1/8" dia) Lemons
72 grams Almonds Ground
4 sheet Phyllo Pastry
25 grams butter
110 grams Sugars, Granulated
1 gram sunflower oil

Recipe Directions for Crusty pear tart

  1. Prepare syrup with 1 dl water and 130g sugar.

  2. Peel the pears, squeeze lemon juice on them, half them and remove the core. Slice the pears 4mm thick.

  3. Place them in the syrup pan, cover with a sheet of parchment paper. Leave to simmer until they are poached. Drain.

  4. Melt 40g butter, and spread half inside a baking tin.

  5. Sprinkle 20g sugar, add the pears. Add the rest of butter, then sprinkle the almond powder.

  6. Place in oven at 200 degree Celsius (th.6-7) for 10 minutes.

  7. Remove the tin from oven. Cover the pears with the previously butter phyllo sheets (20g butter).

  8. Lower the oven temperature to 175 degrees (th.5-6). Leave to bake for another 20 minutes.

  9. Remove from pan straight away and serve warm.
