Recipe Ingredients for crusty italian bread

3 cups bread flour
2 1/2 tsp active dry yeast
2 tsp sugar
1 tsp salt
1 1/4 cups water
1 tbsp olive oil

Recipe Directions for crusty italian bread

  1. add 1/4 cup warm water to yeast and allow to proof.

  2. add to the rest of warm water

  3. add flour, sugar, and salt - stir..

  4. add oil after dough is formed.

  5. knead for a few minutes

  6. allow to rise in oiled bowl for 1.5 -2 hrs covered in plastic wrap

  7. punch down and shape into 2 loaves.

  8. cover and allow loaves to rise another 40 mins.

  9. cut slashes in dough to allow for more rising in oven

  10. place in preheated 425 oven for 10 mins (sprinkle surface with cornmeal to prevent sticking)

  11. lower temp to 400 and cook for another 25-30 mins.

  12. put a pan of water in bottom of oven to encourage crispy crust.
