Recipe Ingredients for Crusty Cauliflower and Ricotta Casserole

2 tbsp olive oil
2 cloves garlic
1/2 cup tomatoes
6 cups cauliflower, diced
3 large eggs
1 cup ricotta cheese
3/4 cup 2% milk
1/4 cup cheese, pepper jack
1/8 cup cheese, cheddar
1/4 tsp nutmeg
1 1/4 lbs potatoes
1/2 lbs green pepper
3/4 lbs carrots

Recipe Directions for Crusty Cauliflower and Ricotta Casserole

  1. Heat oil in large skillet over medium heat. Add garlic and cook 30 sec, do not brown! Add the tomatoes and cook 5 minutes stirring often. Stir in cauliflower and toss to coat all over with the tomatoe mixture. Pour in a few tablespoons water can cover the pan. Cook until the cauliflower is tender, about 7 min. Take pan off heat and let cool to room temp.

  2. Preheat over to 375. Butter a 12X7X2 inch ovenproof dish or other shallow 2.5 quart baking dish.

  3. Beat the eggs in a large bowl. Beat in the ricotta, milk, cheese, parsley, nutmeg, cayenne and pepper. Stir in the cauliflower mixture. Spread in the prepared dish and sprinkle on the bread crumbs or extra cheese.

  4. Bake 20 min until hot and bubbly. Do not overcook or the casserole will dry out.
