Crustless Veggie Quiche Recipe

I needed a low carb breakfast food that was still filling. It doesn't help that I don't prefer meat. So I adjusted a few recipes until I found a quiche I like. I usually use the Eggbeaters egg whites version.

Recipe Ingredients for Crustless Veggie Quiche

1 cup low fat cheddar
1/2 cup minced mushrooms
1/4 cup minced onion
1/4 cup minced bell pepper
1 cup Eggbeaters
2 cups half and half
1/2 tsp. garlic salt
1/4 tsp. chili powder
1/4 tsp. white pepper

Recipe Directions for Crustless Veggie Quiche

  1. Heat oven to 450 degrees.

  2. Sprinkle cheese, mushroom, onion, bell pepper in the bottom of a 9-inch pie plate.

  3. Beat the Eggbeaters in with the rest of the ingredients.

  4. Pour over the mix in the pie pan.

  5. Bake at 450 for 15 minutes, then reduce the temp to 350 and bake 20-30 minutes more.

  6. Do not cut it before you've given it 10-15 minutes to sit and settle.
