Recipe Ingredients for crustless veggie quiche

4 eggs
8 egg whites
1/2 cup carrots
1/2 cup onion
1/2 cup zucchini
1/2 cup spinach
1/4 cup red bell pepper
1/4 cup yellow bell pepper
1/2 cup mushrooms
4 cloves garlic
2 tsp basil
1 tsp extra virgin olive oil
1/2 cup skim milk
1/2 cup part-skim mozzarella cheese (optional, included)

Recipe Directions for crustless veggie quiche

  1. beat eggs and milk

  2. chop/shread veggies & cook with seasonings until tender (use the oil to prevent sticking)

  3. combine veggies & eggs in small casserole dish & bake at 325 degeees for about 40 minutes.

  4. If desired, top with cheese for the last 10 minutes of baking.
