Recipe Ingredients for Crustless Vegetable Quiche

3 large egg Eggland's Best Egg
24 tbsp 100% Liquid Egg Whites
6 oz Low Fat, Cheddar Or Colby Cheese
6 oz Mozzarella, Part Skim Milk Cheese
6 oz Fat Free Half
1/2 tsp Sea Salt
1 1/2 cup (not packed) Cottage Cheese, Lowfat, 1% Milkfat
4 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 1/2 Potato large (3" to 4-1/4" dia) Potato, Flesh And Skin
1 large Onions
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
8 oz Mushrooms

Recipe Directions for Crustless Vegetable Quiche

  1. Prepare all vegetables - chop, slice, dice and mince.

  2. In large non-stick skillet, sprayed with Olive Oil, saute' all veggies, except tomato slices, these are to top the quiche, until tender.

  3. Beat together whole eggs and egg whites till well combined, light and fluffy.

  4. Add cottage chees and half of each remaining cheese, mix well to combine, add vegetable mixture, stir to combine.

  5. Pour into sprayed cassole dish, top with tomato slices and remaining cheese. Bake at 400 for 15 minutes, reduce heat to 325 and bake for additional 30 to 35 minutes, testing center to make sure eggs are cooked completely through
