Recipe Ingredients for Crustless Vegetable Quiche

2 eggs
3/4 cup egg substitute
1/2 cup skim milk
12 ounces nonfat cottage cheese
1/2 cup part-skim mozzarella cheese, grated
10 ounces broccoli, frozen thawed and chopped
10 ounces spinach, frozen chopped and thawed
1 tablespoon olive oil
1/8 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Crustless Vegetable Quiche

  1. Beat eggs in a medium bowl.

  2. Add milk and beat some more.

  3. Add remaining ingredients and stir vigorously to blend.

  4. Pour into a deep, lightly oiled casserole, and place in a 9 x 13 inch pan filled part way with hot water.

  5. Bake at 375 for 35-45 minutes or until a knife inserted into the quiche comes out clean.
