Crustless Swiss Chard Quiche Recipe

Adapted from recipe in the boston globe. Could use cow milk if desired. Also if wanting veg quiche sub fake bacon found near tofu at grocery.

Recipe Ingredients for Crustless swiss chard quiche

1/2 pound swiss chard leaves
1/2 pound kale
5 medium slices bacon
1 tablespoon vegetable oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
6 eggs
1 cup soy milk, plain unsweetened
1 Salt and pepper, to taste
1/4 teaspoon ground nutmeg
1/2 cup Parmesan cheese

Recipe Directions for Crustless swiss chard quiche

  1. Coarsely chop the Swiss chard leaves and kale and set aside; finely chop the chard stems.

  2. In a large skillet over medium heat, cook the chard leaves, stirring constantly, until they wilt. Turn up the heat and cook, stirring, until the excess liquid in the pan evaporates. Transfer the leaves to a plate.

  3. Wipe out the skillet. Cook the bacon until crispy. Remove and place on paper towels to absorb fat. When cool crumble into the leaves.

  4. Add the oil to the pan. When it is hot, add the onion, garlic, and chard stems. Cover and cook over low heat, stirring occasionally, for 8 minutes or until stems and onions are tender. Stir in the chard and kale leaves Transfer to greased pie plate.

  5. In a large bowl, beat the eggs, milk, salt, pepper, nutmeg, and Parmesan. Pour into 9-10 " bake pan. With a fork, gently press the chard mixture into the egg mixture.

  6. Bake for 30 minutes at 350 degrees or until the custard is just set in the center.
