A nice pie for the health conscious for halloween, thanksgiving, or (if you're a pumpkin/sp lover like me) birthdays. Though I don't like artificial sugars, I wanted to see the lowest possible count I could get. Since sweet potatoes are naturally sweet (especially when roasted), not much is needed anyway. You can eat a whole 8th of the pie! That's a huge slice!!

Recipe Ingredients for Crustless Sweet Potato Pie

2 c sweet potato
1/4 c splenda
2 tsp pumpkin pie spice
1 c soft tofu

Recipe Directions for Crustless Sweet Potato Pie

  1. Preheat the oven to 400 degrees.

  2. Blend 2 cups of already-roasted mashed sweet potato with the 1 cup of tofu. Mix and mash well, then blend in the spices and sweetener.

  3. In a lightly sprayed pan, spread the sweet potato mixture. Top with a sprinkling of cinnamon, splenda, or brown sugar if you like.

  4. Bake for 20 minutes, then reduce heat to 350 and continue to bake until knife to the center comes out clean, and everything firms up (around 40 minutes).

  5. Check on the pie often as the extent to which the sweet potatoes were cooked beforehand can affect cooking rate, as well as the water quantity in the tofu.

  6. Let cool for 1 hour.
