Low carb. Travels well; Good served warm or cold. Easily adapted to vegetarian--just leave out ham.

Recipe Ingredients for Crustless Spinach Quiche

1 tsp vegetable oil
1 onion, chopped
1 box frozen spinach, thawed and drained
1 1/2 cups shredded sharp cheddar cheese, 2% fat
4 ounces ham, chopped
1 egg, slightly beaten
1 cup egg substitute
1 1/2 cups egg whites
1/2 cup fat free cottage cheese
1/4 tsp cayenne pepper
1/8 tsp nutmeg
1/2 tsp salt
1/8 tsp black pepper

Recipe Directions for Crustless Spinach Quiche

  1. Saute onion in oil until translucent. Add drained spinach to onion and heat through to reduce moisture.

  2. Sprinkle shredded cheese into a pie plate sprayed with nonstick cooking spray. Layer ham on top of that, then spinach/onion mixture.

  3. Whisk together egg, egg substitute, egg whites, cottage cheese, and spices. Pour over all in pie plate.

  4. Bake at 375 for 30-40 minutes.
