A delicious breakfast quiche without a crust!

Recipe Ingredients for Crustless Spinach Quiche

1 tablespoon vegetable oil
3 green onions, chopped
3/4 onion, chopped
10 oz spinach, washed and chopped
3 eggs, beaten
1 tablespoon golden flax meal
2 1/2 cups shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon ground black pepper

Recipe Directions for Crustless Spinach Quiche

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.

  2. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.

  3. Mix 1 tablespoon of golden flax meal with 3 tablespoons water. Allow mixture to sit for a few minutes before adding to batter as an egg replacement.

  4. In a large bowl, combine eggs, flaxmeal-water mixutre, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.

  5. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
