Can use different types of cheese - I've made this before with broccoli and cheddar cheese - original recipe called for muenster cheese

Recipe Ingredients for Crustless Spinach Quiche

1 tbsp canola oil
1 small onion
10 ounces frozen chopped spinach
5 eggs
2 cups shredded mozzarella cheese
1 cup ricotta cheese
1/4 tsp. salt
1/8 tsp. pepper

Recipe Directions for Crustless Spinach Quiche

  1. Preheat oven to 350 degrees. Lightly grease a 9" pie pan.

  2. Heat oil in large skillet over medium-high heat. Add diced onions and cook, stirring occassionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.

  3. In a large bowl, combine eggs, cheese, salt, and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.

  4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
