I've modified one of my favorite quiche recipes, using lighter ingredients and omitting the crust. It's still delicious.

Recipe Ingredients for Crustless Spinach Quiche

16 oz Spinach
5 tbsp chopped Shallots
2 clove Garlic
1 tbsp Butter
6 oz Heavenly Light Swiss Sliced
0.75 cup Egg Beaters
0.75 cup Milk, Nonfat, Fluid
1/4 cup leaves, whole Basil, Fresh
1 tsp Celery Salt
1.75 large whole (3" dia) Tomatoes, Red, Ripe
1 tbsp Parmesan, Grated Cheese

Recipe Directions for Crustless Spinach Quiche

Preheat oven to 425 F. Microwave frozen spinach for several minutes. In meantime, mince shallot (or onion) and garlic. Saute the shallot and garlic for a minute in the butter in a large skillet. Add cooked spinach and saute for several minutes to evaporate excess moisture. Add the chopped basil and celery salt. While spinach mixture is cooking, in a large bowl combine the Egg Beaters, milk, and shredded Swiss cheese. Add the spinach mixture to the bowl and stir thoroughly. Pour into a well-greased quiche dish. Slice the tomatoes fairly thinly. Place the tomato slices in a ring around the outside edge on top of the quiche. Bake at 425 F for 15 minutes, then lower heat to 350 and bake an additional 20-25 minutes. During the last 10 minutes of baking, sprinkle the tablespoon of parmesan on top of the quiche. Let it stand after removing from the oven for at least 15-20 minutes to set before serving.
