Recipe Ingredients for Crustless Spinach, Onion, Feta and Walnut Quiche

9 gram Olive Oil
168 gram Onion
200 gram Spinach
220 gram Egg
186 gram Milk, skimmed
30 gram Creme Fraiche
63 gram cottage cheese, reduced fat
1/2 teaspoon nutmeg
66 gram flour
16 gram walnuts
116 gram Feta

Recipe Directions for Crustless Spinach, Onion, Feta and Walnut Quiche

  1. Preheat oven 180c, oil and flour a rectangular dish (roughly 10.5 x 8.5)

  2. Cook onions in Olive Oil on a low heat in a covered pan for approx ten minutes until cooked not brown, Remove pan from heat and stir in Spinach, sprinkle over nutmeg and walnut pieces, stir, cover and leave to wilt.

  3. in a separate bowl add shelled eggs, skimmed milk, cottage cheese, creme fraiche and whisk well.

  4. Add salt and pepper and a pinch of paprika to the flour and mix. While whisking add the flour to the egg and milk mixture.

  5. Add the spinach, onion, walnuts to the egg mix, stir to combine and pour into the greased and floured pan.

  6. Place in centre of oven and cook for 20 to 25 minutes until risen and golden brown.
