Recipe Ingredients for Crustless Spinach and Feta Pies

1 tablespoon olive oil
10 ounces frozen spinach
4 scallions
3 eggs
3/4 cup low fat milk
1 tablespoon bread crumbs
2 teaspoons crumbled dried mint
1 1/4 teaspoons salt
1 black pepper
1 pinch cayenne pepper
1 pinch nutmeg
1/3 cup feta cheese

Recipe Directions for Crustless Spinach and Feta Pies

  1. frozen spinach

  2. heat oven to 400

  3. Squeeze excesswater out of spinach. Add spinach and scallions and cook, stirring, until dry, about 4 minutes. Transer to a colander and press with back of spoon to remove the last bit of moisture. Spray muffin tins with pam.

  4. Put spinach mixture, eggs, milk, bread crumbs, mint, salt, balck and cayenne peppers, and nutmeg in a food processor and pulse until spinach is finely chopped. Remolve blade and stir in feta cheese. Divide mixture evenly among muffin tins. Bake until set around the edges but still slightly solft in the center, about 20 minutes. Turn oven off, leaving pies inside to set, about 5 minutes move.
