I loved the recipe I found on calorie count & made a few modifications. I also made the serving size a little bigger - 1/8 of a pie just wasn't enough for a regular meal.

Recipe Ingredients for Crustless spinach & cheese quiche (alternate)

7 eggs
1/4 cup half and half
1 cup swiss cheese, lowfat
2 cups cooked spinach
1 tsp butter
1/2 cup chopped leeks
1/2 cup chopped scallions
1/2 tsp salt
1/4 tsp cayenne pepper
1/8 tsp hot sauce
1/2 tsp onion powder
1/4 tsp nutmeg

Recipe Directions for Crustless spinach & cheese quiche (alternate)

  1. Briefly wisk together eggs, half & half, salt, pepper, hot sauce, and onion powder.

  2. Cook fresh spinach about 3 minutes in boiling salted water or use defrosted frozen chopped spinach. Drain in colander.

  3. Use the same heated pot to melt butter and saute leeks and scallions until tender (about 7 minutes on medium/low heat). Add spinach back into pot, season with nutmeg, salt, pepper, and onion powder, and cook off most of remaining liquid.

  4. Spray a pie plate with nonstick spray. Layer Swiss cheese, spinach mixture, and swiss cheese again in the pie plate. Pour the egg mixture over those. Bake at 375? for 30 - 40 minutes or until eggs are set. Place the plate under the broiler for the last 3 minutes to brown the cheese on top of the pie.
