Recipe Ingredients for Crustless Spinach, Artichoke Hearts, Cottage Cheese Quiche

3/4 yellow onion, chopped
10 oz frozen spinach
3 oz artichoke hearts, frozen
5 eggs
3/4 cup nonfat cottage cheese
1/2 tsp black pepper
1/2 tsp salt
1 tsp garlic, minced
1 tsp basil, minced
2 tbs 1% milk

Recipe Directions for Crustless Spinach, Artichoke Hearts, Cottage Cheese Quiche

  1. Preheat oven to 350 degrees. Lightly grease a pan.


  2. Put Pam in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach (defrosted with moisture drained), artichokes, pepper, salt, garlic and basil and continue cooking until excess moisture has evaporated.


  3. In a large bowl, combine eggs and milk. Then add cheese.

  4. Add spinach mixture and stir to blend. Scoop into pan.


  5. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
