Recipe Ingredients for Crustless Salmon Quiche I

1/2 T brummel and brown spread
1/2 small onion, sliced into rings
1 garlic clove
1 1/2 tsp olive oil
1 1/2 oz broccoli (small florets, blanched)
15 oz canned salmon
1 oz crimini mushrooms, sliced
4/5 oz hard parmesan cheese, grated
1 T flour
3/4 cup 1/2 and 1/2
3/4 cup 1% milk
1 salt
1 pepper
1/2 tsp cilantro
1/8 tsp nutmeg
4 large eggs

Recipe Directions for Crustless Salmon Quiche I

  1. Butter glass pie pan with spread.

  2. Make Filling: saute onion and garlic in olive oil. Blanch broccoli. Obtain other ingredients.

  3. Make custard: in bowl combine 1/2 n 1/2, milk, spices and egg. Stir until combined.

  4. Place filling in bottom of greased pan making sure is distributed evenly. Sprinkle with flour. Pour custard mixture over the filling.

  5. Bake at 400 degrees for about 30 minutes, until knife inserted comes out clean. Remove from oven and let sit 10 minutes prior to slicing.
