I know there's more in here, but otherwise a veggie-laiden egg caserole.

Recipe Ingredients for Crustless Quiche

2 eggs Egg, Scrambled
0.33 cup, chopped Broccoli
3 mushroom Mushrooms
0.1 medium Onions
1.5 oz Mozzarella, Part Skim Milk Cheese
2 clove Garlic

Recipe Directions for Crustless Quiche

Preheat oven to 350 F. Sautee veggies, put in caserole dish/quiche dish. In bowl, mix 6 eggs with little liquid (rice milk, fake butter?), paprika, italian seasonings of choice. Put about 4-6 oz of moz. cheese over veggies, pour egg mix over. Cook for 45-55 min, until middle is set, golden. Check with knife. Let cool 10 min. Enjoy. Makes 2-4 servings in caserole as main dish - ingredients listed here is 1/3 of total caserole.
