Crustless Quiche Recipe

Crustless quiche that can be prepared as one dish or as mini-quiches in muffin tins. Use spinach instead of broccoli, add whatever other veggies you like, use different cheeses ... the possibilities are endless.

Recipe Ingredients for Crustless Quiche

1 tablespoon vegetable oil
1 onion, chopped
10 ounces broccoli florets, thawed and drained
1 1/4 cups egg substitute
2 cups reduced-fat sharp cheddar cheese,
1/4 teaspoon salt
1/8 teaspoon ground black pepper

Recipe Directions for Crustless Quiche

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan (or 12-cup muffin pan).

  2. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in broccoli and continue cooking until excess moisture has evaporated.

  3. In a large bowl, combine egg substitute, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan or muffin tins.

  4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
