Super good! You can substitute chopped cooked ham, or crabmeat for the chicken.

Recipe Ingredients for Crustless Quiche

4 eggs, beaten
1 1/2 c milk
1/4 cup green onions, sliced
1/4 tsp salt
1/8 tsp pepper
1 dash ground nutmeg
3/4 cup chicken breast, cooked, chopped
1 1/2 cups cheese, swiss, shredded
1 tbs flour

Recipe Directions for Crustless Quiche

  1. Preheat oven to 325.

  2. In a medium bowl stir together eggs, milk, green onions, salt, pepper, and nutmeg. In a small bowl, toss together the cheese and the flour. Add to egg mixture; mix well.

  3. Pour egg mixture into pie pan that has been sprayed with cooking spray. Bake for 40-45 minutes or until knife inserted in the center comes out clean. Let stand 10 minutes before serving.
