Recipe Ingredients for Crustless Quiche

12 oz sweet potato, pureed
3 large eggs, beaten
4 large egg whites
2/3 cup ricotta cheese
3 tbsp grated Parmesan cheese
2 teaspoons basil
1/2 teaspoon kosher salt
1 dash nutmeg

Recipe Directions for Crustless Quiche

  1. Preheat oven to 350-375 degrees

  2. Whisk together squash, ricotta, salt, basil, and nutmeg and add beaten eggs

  3. Pour into 8 well-oiled muffin cups

  4. Bake until golden brown and set in the middle (about 22 minutes)

  5. Will keep in refrigerator up to 3 days
