Makes 4 servings



Preheat oven to 325F. Melt butter in 9 x 13 inch pan. In a saucepan, scald the cream, milk, or half and half. When tiny bubbles begin to form around the edge, remove from heat and add the cheese. Stir until cheese melts, then add salt, paprika, onion and pepper. Beat in eggs, one at a time. Stir in green chilies (or jalapenos). Bake for about 45 minutes or until set. May be frozen and reheated.

1 3/4 cups 1% milk
1 cup shredded Monterey Jack cheese
1/2 teaspoon salt
1/4 teaspoon paprika
1 teaspoon grated onion
1 pinch cayenne pepper
6 egg whites
4 oz. chopped green chilies
1 cup of frozen spinach
