Recipe Ingredients for Crustless Quiche

6 eggs
1/2 cup feta cheese
10 oz frozen spinach
1/2 c chopped red onion
1/2 c chopped mushrooms
1/2 c chopped tomato
1/2 tbsp extra virgin olive oil

Recipe Directions for Crustless Quiche

  1. Saute mushroom and onion in olive oil

  2. Thaw and press spinach to remove excess water

  3. Pour mushrooms, onion, tomato, spinach and feta into pie dish

  4. Whip eggs and pour over vegetables

  5. Bake at 350 for 35 minutes or until firm
