Full of veggies -- makes a great breakfast

Recipe Ingredients for Crustless Quiche

10 eggs
2 onions
12 oz baby spinach
1 c egg beaters
1 c flour
1/2 tsp baking powder
1/2 tsp salt
2 1/2 c skim milk
8 oz cheddar cheese
5 c broccoli
1 c mushrooms
1 pinch cayenne pepper

Recipe Directions for Crustless Quiche

  1. Cook onions, broccoli, and spinach until the broccoli has softened and the spinach is wilted.

  2. Combine other ingredients in separate bowl until smooth.

  3. Add vegetables, and pour entire mixture in large baking pan (coat with nonstick spray).

  4. Spread cheese evenly on top.

  5. Bake at 400 degrees for 30 minutes or until sides begin to brown.
