from 3 fat chicks on a diet, slightly modified can substitute spinach for broccoli

Recipe Ingredients for Crustless Quiche

2 cups mushrooms
1 small onion
2 cups chopped broccoli
1/4 cup bread crumbs
2 cups skim milk
3 eggs
3/4 cup egg substitute
1/4 cup parmesan cheese
1 clove garlic
1 tsp. Italian seasoning
1/4 tsp. black pepper

Recipe Directions for Crustless Quiche

  1. Cook mushrooms, onion and broccoli in a skillet until tender. Add bread crumbs, stir and place in a quiche pan or glass pie dish. Combine remaining ingredients in a mixing bowl and pour over vegetables in quiche pan.

  2. Bake at 350 degrees for 35-45 minutes. Let stand 5 minutes before cutting and serving.
