Crustless Quiche Recipe

A recipe I originally found on allrecipes.com and I adapted it. You could make it even healthier by using low-sodium ham, no salt and whole wheat flour.

Recipe Ingredients for Crustless Quiche

1/2 cup chopped ham
1/2 cup shredded mozzarella cheese
2 tablespoons margarine
200 mg egg substitute
1/4 cup parmesan cheese
1/4 cup onion, finely chopped
1/2 cup all-purpose flour
1 1/2 cups 2% milk
1/4 teaspoon ground nutmeg
1/2 cup broccoli
1 teaspoon salt
1 teaspoon black pepper

Recipe Directions for Crustless Quiche

  1. In a skillet fry up ham.

  2. Preheat oven to 350. Spray Pam in a 9 inch pie pan.

  3. Line bottom of pie plate with ham, cheese and broccoli.

  4. In a bowl combine egg substitute, butter, onion, salt, flour, nutmeg and milk. Whisk together until smooth; pour into pie pan.

  5. Bake in oven for 1 hour. Serve hot or cold.
