Nice normal quiche without the extra calories from the crust. I never use fat free products but I'm sure you could use fat free cheese if you like

Recipe Ingredients for crustless Quiche

10 eggs
2 cups chopped spinach
1/2 cup red pepper
1/2 cup onion
1 cup cheddar cheese
2 oz feta cheese
1/2 cup milk

Recipe Directions for crustless Quiche

  1. chop all veggie and put in 12 - 14 inch baking dish

  2. add feta 1/2 the cheddar cheese

  3. Mix eggs and milk and beat well

  4. pour over veggie and cheese

  5. sprinkle remaining cheese

  6. Bake 375 for 30 to 40 minutes
