This has 2 WW points (if cut in 8 servings). Calories noted are based on 12 muffin-size servings. Excellent recipe from Susan Although the ingredients only list 8 oz of spinach, you may use more as well as a mix of vegetables (e.g., mushrooms, peppers, artichokes, etc.).

Recipe Ingredients for Crustless Quiche

3/4 c egg substitute
1/4 c Bisquick, low fat (better is Bob's Red Mill Low Carb Baking Mix or Carb Quick)
1 1/2 c skim milk
8 oz Canadian bacon
1/2 c low fat cheese (swiss, cheddar, etc.)
1/2 c onions (or more to taste depending on mix of vegetables)
1/4 t pepper
8 oz spinach

Recipe Directions for Crustless Quiche

  1. Whisk eggs, milk, pepper, and Bisquick.

  2. Add remaining ingredients and mix well.

  3. Spray a 9 inch pie plate or quiche pan with Pam.

  4. Pour mixture into pan and bake for 45 minutes at 350 degrees.

  5. Let stand for 10 minutes before cutting.
