Crustless quiche that can be prepared as one dish or as mini-quiches in muffin tins. Use different veggies, meats, or add cheese.

Recipe Ingredients for Crustless Quiche

1 tablespoon olive oil
1 onion, chopped
5 ounces broccoli florets, chopped
5 ounces cauliflower florets, chopped
4 oz turkey pepperoni, chopped
4 eggs
1 1/4 cup 2% milk
1/2 cup fat free sour cream
1/8 teaspoon ground black pepper
1 teaspoon oregano

Recipe Directions for Crustless Quiche

  1. # Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan (or 12-cup muffin pan).

  2. # Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in broccoli, cauliflower, corn, and turkey pepperoni and continue cooking until excess moisture has evaporated.

  3. # In a large bowl, combine eggs, milk, fat free sour cream, pepper and oregano. Add spinach mixture and stir to blend. Scoop into prepared pie pan or muffin tins.

  4. # Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
