Recipe Ingredients for Crustless quiche

4 medium eggs
1 egg yolk
1/4 cup half and half or heavy cream
2 ounces cream cheese
8 ounces gouda cheese
2 ounces monterey jack cheese
2 tbsp parmesan cheese
1 medium zuchinni, diced
1 small onion, diced
1/2 cup mushrooms, sliced
1/2 cup broccoli, diced
2 peppers, serrano, diced
8 slices turkey breast
2 tbsp butter
1/4 tsp salt
1/8 tsp pepper
1/4 tsp garlic

Recipe Directions for Crustless quiche

  1. Sautee vegetables with butter and garlic. Season and set aside to cool.

  2. In a blender, mix eggs, egg yolk, cream cheese and half and half.

  3. Spoon vegetable mixture into a 9 in. buttered glass pie pan. Sprinkle gouda cheese. Pour egg mixture over it and stir to distribute vegetables and cheese. Top with remaining monterey and parmesan cheeses.

  4. Bake covered with aluminum foil for 20 min at 375 F. Remove aluminum foil and bake for 15 min longer or until center is set. Recommended to place a pan with boiling water in oven to prevent drying out.

  5. Let cool at least 10 min before serving
