Original recipe calls for four eggs and 1 cup of milk. You can use any vegetables for the last 2 cups.

Recipe Ingredients for Crustless quiche

3 large eggs
3/4 cup skim milk
140 g low fat cheese (3/4 cup)
2 T Dijon Mustard
1/4 cup onion, chopped
1/2 cup frozen spinach
1/2 cup mushrooms, stems and pieces
1/2 cup carrots, chopped
1/4 cup black beans
1/4 cup yellow corn, canned

Recipe Directions for Crustless quiche

  1. Preheat oven to 350

  2. beat liquid ingredients

  3. mix in vegetables

  4. bake for 45-50 min.
